Problem: What problem is this initiative trying to address?

NH101 addresses nutrition. Chester County is among the least healthy counties in South Carolina. The AMA & the Centers for Disease Control continue to report staggering rates of obesity as well as chronic diseases and their connection to unhealthy eating habits. All indicators point to improper nutrition as the insidious barrier to healthy weights and improved quality of life. Yet, a Nielsen Global Consumer Insights poll revealed that consumers need easy-to-understand nutritional information.

Solution Summary: What is the proposed solution? What do you see as its most promising aspects for creating shared value?

NH101’s solution is a plain language nutritional curriculum presenting the predisposing, enabling and reinforcing factors to health and wellness across age, gender, monetary resources, settings, family size, cultures, physical activity levels and varying literacy levels. Presented in seven levels:
Level 1. Ten simple strategies to apply with each meal, each day;
Level 2. Adding nutrition facts labels; public health daily nutrient consumption guidelines;
Level 3. Calculating calories;
Level 4. Nutrient consumption limits to avoid/address chronic diseases;
Level 5. Nutrient consumption levels across age and gender;
Level 6. Nutrient consumption levels – macronutrients and micronutrients;
Level 7. Charts with standards for good health – Weight, Waist-Height Ratio, BMI, Age-Gender-Physical Activity-Caloric Needs; Medical Tests Standards.
The NH101 strategy of creating lay nutritionists in homes, workplaces, classroom, communities, etc., catalyzes societal and economic progress.

Impact: What is the impact of the work to date? Specify both the social and the environmental impact of your work

To date, 3722 participants have received direct instruction. The 97 participants (of varying literacy levels) in the twelve-week pilot study, ages 13 – 81 yrs., 12 male & 85 female, demonstrated improvement in nutritional skills through FDA’s 2000 Calorie Daily Diet Reference Values pre-tests and post-tests:
86% learned daily consumption standards for added sugar;
92% learned daily consumption standard for salt;
84% learned daily consumption standard for fat;
72% learned daily consumption standard for cholesterol.
29% lost weight (16 lb. average) while many reported blood pressure, blood glucose and cholesterol level improvements.
Socially and environmentally, NH101 equalizes the health challenges of 'proximity to a healthy food retailer' versus 'proximity to the nearest junk food retailer' versus 'proximity to a farm-to-consumer retailer. NH101 also levels the playing field across educational levels, household incomes and/or predisposition to chronic diseases.

Financial sustainability plan: How is this initiative financially supported? How will you ensure its financial sustainability long-term?

NH101 is supported by foundation and corporate grants, as well as a coalition of individuals and organizations supporting the development of healthy and economically sustainable communities throughout South Carolina. The budget percentages are:
Individuals - 3%;
Organizations - 9%;
Foundations - 62%;
Corporations - 26%
Efforts for funding will continue through grant writing as well as public and private solicitations. Additionally, as of September 2017, a new sustainability effort of shared value has been created through an online portal of the seven levels of downloadable PowerPoint NH101 instruction modules - $10.00/download.

Unique value proposition: What makes your initiative innovative? How does your project differ from other organizations working in the same field?

Too many times, the nutritional approach is to ‘scrap’ most, if not all, foods in the current diets. NH101 believes the current diet should be the starting point for the analysis of food intake. It provides a familiar foundation to build upon and is the most logical method to gain the skills needed to achieve nutritional adequacy. On day-one, NH101 delivers instruction to begin examining current food intake/nutrients and, if need be, begin maneuvering and making adjustments from that point.

Founding story: Share a story about the "Aha!" moment that sparked the beginning of this initiative.

As my church’s organist, Sunday after Sunday, I played soft music during altar calls. Often during these moments members would request prayer for illnesses and diagnoses of chronic diseases - diabetes, cancer, heart disease. Sadly, some of these individuals would pass on. What followed were funerals with me again playing soft music, and repasts with menus of foods rich in fats, added sugar, cholesterol and salt. Regretfully, one-on-one discussions about unhealthy eating habits were not working ... and so the cycle continued! My community needed an eye-opening curriculum in proper nutrition to address this dire health emergency. My mission became to develop a curriculum that could foster a mindset of nutritional knowledge that would maintain any of these individuals for life and not just for a few months or until one reaches an ideal weight.
My vision is real and lasting change!
