La proteína de origen animal es uno de los recursos mas difíciles de obtener ya que se necesitan mucha agua, tierra, alimentación, antibióticos, medicinas y generan una gran cantidad de residuos, y es por ello que planteamos una proteína saludable y amigable con el ambiente.

Actualmente estamos desarrollando algunas harinas proteicas a base de insectos, los insectos poseen la misma sustancia que los animales que consumimos actualmente y son considerados como bancos porteicos por su alto contenido de proteínas, para la producción de insectos no se necesitan de vacunas ni antibióticos y generan menos desechos.

La producción de insectos se encuentra en fase de desarrollo pero para el año 2018 ya contamos con pedidos de harina de insectos para ser consumidos por niños con desnutrición crónica.

La idea surge por una investigación de tesis que realice en la cual se enfocaba en buscar fuentes de proteínas para la alimentación de codornices que fuesen sostenibles.
A partir de esta investigación vi el gran potencial de los insectos para consumo humano.

Hi Mouhamadou Moustapha Seck, the process in broad strokes is as follows

Fattening: The crickets are bred and fattened in captivity, they feed on balanced feed for birds, fruits, vegetables, some shrubs and water. The cricket to be used is Acheta domestica, Assimilis and bimaculatus
Sacrifice: The crickets are sacrificed by means of freezing and pass through cooking
Dehydrated: the crickets are dehydrated in an oven until leaving them with an average humidity of 12%
Grinding: The crickets are milled and sieved to later pack them.
