Hi Mouhamadou Moustapha Seck, the process in broad strokes is as follows

Fattening: The crickets are bred and fattened in captivity, they feed on balanced feed for birds, fruits, vegetables, some shrubs and water. The cricket to be used is Acheta domestica, Assimilis and bimaculatus
Sacrifice: The crickets are sacrificed by means of freezing and pass through cooking
Dehydrated: the crickets are dehydrated in an oven until leaving them with an average humidity of 12%
Grinding: The crickets are milled and sieved to later pack them.
